Sweet Potato Cheesecake Bars

1/2 cup all-purpose flour
2/3 cup finely crushed graham crackers
1/2 cup finely chopped peanuts
1/4 cup sugar
1/2 cup margarine or butter, melted
1 8-oz. can sweet potatoes, drained
4 ozs. cream cheese, softened
1/3 cup sugar
3/4 teaspoon pumpkin pie spice
1 egg
1/2 cup dairy sour cream
1 tablespoon milk
2 tablespoons finely chopped peanuts

In medium bowl, stir together the finely crushed graham crackers, flour, 1/2 cup peanuts, and 1/4 cup sugar. Add the melted margarine or butter and mix well to make crust.

Press mixture into the bottom of an ungreased 9x9x2-inch baking pan. Bake in a 350 degree oven for 12 minutes. In a small bowl, combine sweet potatoes, cream cheese, 1/3 cup sugar, and pumpkin pie spice. Beat with electric mixer on medium speed until thoroughly blended. Add egg, sour cream and milk. Beat only until blended. Pour over partially baked crust. Sprinkle with 2 tablespoons peanuts.

Bake in 350 degree oven for about 20 minutes or until knife inserted into center comes out clean. Cool in pan on a wire rack. Cut into bars. Store, covered, in refrigerator. Makes 3 dozen.
