Coconut Delights

Coconut Delights

1-3/4 cups all-purpose flour
1 tablespoon baking powder
3 eggs
3/4 cups sugar
1/3 cup margarine or butter, melted
2 teaspoons vanilla
1-1/2 cups flaked coconut, toasted
Chocolate Glaze

In a small mixing bowl, stir together flour and baking powder. Set aside.

In large bowl, beat eggs with electric mixer on high speed 4 minutes or until thick and lemon colored. Put mixer on medium speed and gradually beat in sugar. Add margarine or butter and vanilla. Add flour mixture and beat on low speed until blended. Set aside 1/2 cup of coconut. Chop remaining coconut and fold into the batter.

Heat a pizzelle iron on medium heat until a drop of water sizzles on the grid. Reduce heat to medium low.

Place a slightly rounded tablespoon of butter slightly off center toward the back of grid. Close lid and bake 30 to 60 seconds or until golden brown; turning once. Turn wafer out onto a cutting board; cut into quarters. Transfer to a paper towel to cool completely. Complete the process until batter is used.

Prepare Chocolate Glaze. Dip the rounded edge of each quarter into the glaze, then into the reserved coconut. Place on a rack until glaze is set. Makes 6 to 8 dozen.

Chocolate Glaze: Stir together 1 cup sifted powdered sugar, 2 tablespoons unsweetened cocoa powder, 1/4 teaspoon vanilla, and enough milk (1 to 2 tablespoons) to make a mixture of glazing consistency.
